Hawaiian Pancakes.

Not unlike any other Sunday morning, I awoke to the smell of coffee and the sounds of worship music. I wandered out to the kitchen and was pleasantly surprised to discover Hawaiian pancakes in the oven! Hawaiian pancakes have always been my favorite breakfast food.

The recipe is very simple, so I decided to share it. Keep in mind this is for one pan (those shallow glass circular pans work perfectly). I usually eat half a pan. You’ll have to double or triple the recipe if you’re cooking for others too.

Preheat the oven to 400 degrees.

Use the microwave to melt 1/4 cube of butter in each pan. Move the pan around until the butter is everywhere, include the sides.

Now, mix 1 egg, 1/2 c. milk and 1/2 c. flour. Pour into (this is key!) the center of the pan. This will cause a ring of butter around the batter. Make sure to evenly distribute the batter between pans.

Bake for 22 mins. or until golden, with crunchy edges. Serve hot with lemon juice and powdered sugar. Enjoy!!
